Undercover Shiraz 2012
Story Named in recognition of McLaren Vale's history of supplying other regions with our finest red grapes. Known as the mid palate of Australia, McLaren Vale fruit is well regarded for its ability to improve the quality and richness of wines from other regions.
Vintage The 2012 vintage was dry and conditions during ripening were excellent with mild days and cool to cold nights, ensuring good acidity in the fruit. The generally lower crop potential and large canopies resulted in rapid ripening in early varieties and some of the best quality fruit for a number of years.
Nose The nose is quite reserved and exhibits aromas of talc, plum, dark chocolate and mint.
Palate The palate is well balanced and delicate with red berry fruit dominating. The wine has an airy feel in the mouth with a velvety texture and displays subtle oak aromas with fine tannins.
Pairing Venison loin dry rubbed with juniper berry and lavender. Serve on braised cabbage with a blueberry and red wine glaze.
